Kitchen Princess. That is my middle name. But because it's a nasty one to pronounce, people just call me Mar. 90% of the time my mind thinks of food and new, fun and creative ways to combine different ingredients. I often find inspiration on Pinterest, Instagram, websites, restaurants menus and cookbooks. Today I am showing you four dishes I made in the seven days to show you how you can eat beautiful works of art that are delicious and healthy at the same time!
As some of you might know, I have been a #toneitupgirl and Nutrition Plan member for around three years now. Like any other year, I join the challenges Karena and Katrina from Tone It Up set out for us. On January 3rd their new challenge began and I have been totally loving the first one and a half week. For now I want to inspire you to make healthy and delicious food choices. Not only preparing good nutritional meals/snacks for yourself but also for your friends and your family. In this post a special emphasis on presenting food on a plate like a chef in a five star restaurant would!
Banana Egg Pancakes
One of my favorite breakfast ideas of all time: banana-egg pancakes! My love for these type of mini pancakes is endless. I have made them throughout all of 2015 and I plan on making many more of them in this brand new year. Mix 2 eggs and 1 large banana together and your batter is ready. No weird unnecessary additives. Which is why these pancakes are often called Paleo-pancakes. You should really give them a go. Stack them on a plate and decorate with your favorite fruits, nuts and seeds. No need to go crazy with the powdered sugar or syrup because these pancakes are sweet enough already thanks to the banana!
Green Salad
This is a dish I had for lunch the other day. It is really simple: edamame beans, avocado, cottage cheese and Rivolo cherry tomatoes (they are the best, super sweet!) I sprinkled some herbs on top, I believe these were Italian herbs. Do I sound crazy when I say a beautiful arranged meal tastes even better than one that doesn't look as put together?
Cauliflower Pizza
Now this is what I call a party on a plate! Healthy and delicious pizza. Made out of cauliflower! Yes it is possible. Gotta make these at least once in your life. It is kinda like a bucket list food thing. However, be prepared for complaining family members who dislike cauliflower smell! ;-) Grate the cauliflower, add 1 egg, some salt and pepper and if you want some mozzarella cheese. Mix it together, then put the dough on a baking sheet in the oven for about 30 minutes at 200ºC. Before you do, make sure to drain the mixture from excess moisture so the pizza crust will become firm and crispy! Add your favorite toppings and put in the oven until it's all nicely baked.
Heart Shaped Almond Cookies
How cute are these? This recipe comes from Mimi's Healthy and Delicious cookbook. All you do is add 300gr almond flour, 1 egg, 1 table spoon of melted coconut oil and honey together. Add enough honey otherwise the cookies won't be very sweet. Flatten the dough on your kitchen dresser. Use cookie cutters or a knife to create beautiful shapes or cute kitties for your cat loving friends! These only need to go in the oven for about 20 minutes at 190℃. So simple. The almond cookies were also shown in a vlog that Mimi's husband Alex posted the same day I made them!
