FROM ITALY WITH LOVE

Today I have a very special recipe for you. This particular dish is something my boyfriend and I came up with in 2012. We looked at recipes online, learned how to marinate tomatoes from his sister and brought whatever ingredients we liked to the mix. It's basically our very own love recipe. This oven dish is perfect for a lazy Sunday night with family and friends. And it's Italian! What's not to love!?

TOMATO AND PEPPER CANNELLONI
Ingredients
250 grams of Roma tomatoes
300 grams of tomato paste
200 ml Greek yogurt
100 ml of extra virgin olive oil
50 ml water
1 onion
1 red pepper
1 yellow pepper
25 g of chives
2 cloves of garlic
salt
pepper
fresh basil
handful grated Parmesan cheese

Directions
First things first. Start with cutting the Roma tomatoes in half because you want them to be completely and thoroughly marinated. Pour the olive oil in a hot frying pan. Add minced garlic, salt and pepper. When it's mixed together and starts to smell amazing, add all the tomatoes. Make sure not to cook your tomatoes in the oil. Leave it simmer until the rest of the dish is ready. You can play with this by adding chili flakes, shredded coconut or maybe oregano.




Next mix the greek yogurt, chives, water and tomato paste together. Make sure the substance isn't too thin. It needs to be sauce-like. Add more or less water if you have to.Now cook the cannelloni tubes for four minutes. In the mean time cut the peppers and onion in small pieces, then add to the mixture. When you take the cannelloni off the heat, be careful not too hurt yourself, then fill them up with the mixture. You can use a spoon or fork for this. You can now put the stuffed cannelloni's in a greased baking dish and put it in a pre-heated oven at 200 degrees for 40 minutes.

Before it goes into the oven, make sure to straw as much cheese as you like on top. After the 40 minutes you can remove the dish from the oven. You then can use the marinated Roma tomatoes and fresh basil leafs to decorate the dish. Not only is this super tasty, it's also very colorful and therefore a cheerful dinner to put on your dinner table.

THE LITTLEST THINGS

The littlest things... it's a cliche but so true. If you cannot see beauty in small things, you will have a hard time finding happiness in big things. The day before yesterday, I decided to go for a walk. The sun was shining in my face the whole time during dinner which made me wanna capture the beautiful evening sky. You can find art on every street corner and in every garden but on my walk I tried to only shoot objects that really stood out to me.

SLEEPING BEAUTY

Today I'm sharing with you my favorite place of the house. I'm referring to my bed!(I realize how lazy this must sound to you)
I spend a lot of time in and on my bed. I feel great when I grant myself enough sleep; more energy and ready to take on every single day. And I just love sleeping in, having breakfast in bed and reading up on my favorite blogs while still in my PJ's.
