VEGAN QUINOA POWER BOWL

This might just be the easiest recipe I have ever posted. But that doesn't mean it's boring. Look at all the colorful ingredients. This lunch idea makes me super happy! I'm going to divide this recipe into two parts. First we're making a tomato salsa! This will be one of the mail fillers of the quinoa bowl. But because the salsa needs a little extra preparation and because it can be eaten by itself, it deserves a little more attention.
TOMATO SALSA
Ingredients
3 middle sized tomatoes
1 garlic clove
1 onion
coriander
half a lemon

Directions
You can mix in other ingredients such as a chilli pepper, Himalaya salt or something like that but I like my salsa simple. I personally think that a salsa is such a versatile dish. You can eat it with just about anything. For example in salads or as a dip.
You start of by cutting the garlic, onions and tomatoes in tiny pieces. Some onions make you cry more than others. Luckily I didn't put on much make-up so no ugly black mascara tears for me (Nashville, anybody?!)
You then mix the three ingredients together in a bowl and add as much coriander as you like! I love the way this tastes and looks.
Now squeeze half a lemon over your dish. Et voila!Your salsa is ready to serve. Enjoy it on its own or on top of a whole-wheat cracker. Or do as I did and make it part of a quinoa power bowl!
The above pictured I had for lunch today. I chose to add:

75 grams of quinoa
half an avocado
50 grams of cucumber
some vegan cheese

Prepare the quinoa and while it's boiling, cut the other ingredients in smaller pieces. Put it in a pretty bowl. And enjoy your Vegan Quinoa Power Bowl! Let me know if you made it too and what you thought of it!
